Carrot Top Pesto
This is an easy carrot top pesto recipe that helps you reduce waste and save money!
You can experiment with different nuts and cheeses depending on what you have in the fridge.
Whilst it doesn’t pack the same powerful flavour as basil, this is a tasty, light and fresh pesto which I love to serve this with pasta, salads, and sandwiches.
Ingredients
- Carrot tops
- 50g hazelnuts / walnuts
- 100ml Olive Oil
- Juice of 1 Lemon
- 25g parmesan
- Optional: handful of parsley / basil
- Optional: 1 garlic clove

Recipe
- Blitz the nuts for around 30 seconds
- Then add the remaining ingredients and blend again until it is as smooth as you want it!
- Season to taste with salt and pepper and serve your carrot top pesto with pasta, salad, or a sandwich.
